I live a block away from Avenue of The Puerto Ricos and this guy was selling avocados the size of my head. I bought one and made so guacamole and baked chips. This is the best guacamole I have ever had. This recipe came from Carlos and Charlie's in Cancun. The chips are of my own creation.
GUAC:
2 Average sized Avocados
1/2 White Onion
1 Roma Tomato
1 Jalepeno Chile
2 Cloves of Garlic
Key Lime Juice (or a generous helping of regular lime juice)
Garlic Powder
Salt
Black Pepper
Dice all ingredients and fold together. Add spice to taste.
CHIPS:
Soft Tortilla Chips (Stale ones work great)
Olive Oil
Salt
Pepper
Lime Juice
Preheat oven to 350. Cut tortilla chips into triangles with scissors. Brush both sides of tortilla with olive oil. Add Salt, Pepper, and Lime Juice to taste. Cook for about 6 minutes or until slightly golden.
